Ingredients
- Avocado oil - To use on the top of the griddle for cooking the tortillas because it has a high smoke point. Any type of mild-flavored oil (like vegetable oil or refined coconut oil) can be used on top of the griddle as well.
- Chicken thighs - I use shredded chicken meat.
- Taco meat - Ground lean beef works great.
- Taco seasoning - For flavor.
- Onion - Sliced red onion is my favorite.
- Sweet peppers - You can use red or green bell peppers, or a combination of both.
- Tortillas - I use flour tortillas for this because they make a better crispy tortilla but corn tortillas also work.

How to Make Blackstone Quesadillas
Preheat the Blackstone to medium heat. Add the avocado oil.

Step One: Add the peppers and onions. They take a few minutes to soften.

Step Two: Add the tortillas and cook until the sides are golden brown.

Step Three: Once they start to brown, add the ingredients that you like. We layer cheese, meat, veggies, and then more cheese before the top tortilla.

Step Four: Cook for another minute and carefully flip. Cook for another minute.

Step Five: Remove from the griddle and place on a cutting board. Slice into wedges.

Step Six: Serve and enjoy.
Top tip
Outdoor griddles are my favorite way to cook this easy weeknight meal, but if you're unable to use the griddle for any reason, you can recreate this on the stovetop easily enough.
Variations
- Steak - If you want to use steak to turn these into steak quesadillas, it's easy to make that swap. Thin slices work best.
- Cheese - Leave out the meat and just make your tortilla full of melted cheese. Monterey Jack, mozzarella cheese, or any pre-shredded cheese will work to make a simple cheese quesadilla.
- Vegetables - Have fun adding more veggies. Diced jalapenos, black beans, chopped tomatoes - you name it.
- Spices - You can also season the ingredients with garlic powder and onion powder, or cayenne pepper for a spicy kick.

To make the perfect quesadilla, all you need is your Blackstone grill and a spatula for flipping the tortilla. It's as simple as that.
Storage
These easy Blackstone quesadillas are delicious, fresh, and hot off the grill, but if you have leftovers, store them in an airtight container and keep them in the fridge. To reheat, you can warm them on the griddle, in the microwave, or on the stove.
I don't recommend freezing these for later.

Absolutely. These quesadillas are a great way to use leftovers. Just be sure that the steak is cut into bite-sized pieces so that it fits well with the rest of the ingredients. You can add to this recipe, or use the steak to replace the chicken or taco meat.
You want the temperature to be close to 400 degrees, as this is a good heat range to brown the tortillas without burning them, while also cooking the ingredients and not drying them out.
Lightly toasting the tortilla is a big part of making it perfect. Also, make sure that you're not using too much oil, as you don't want to get the tortilla soggy.

Ingredients
- 1 tablespoon avocado oil
- 3 oz shredded chicken thighs
- 3 oz taco meat
- ½ teaspoon taco seasoning
- ½ onion sliced
- 2 oz sweet peppers sliced
- 4 tortillas
Instructions
- Preheat Blackstone to medium heat.
- Grease with avocado oil.
- Saute the onions and peppers until softened, about 4-5 minutes.
- Put tortillas on griddle and brown both sides.
