    Blackstone Potatoes are a fast and easy way to cook potatoes on the grill. With just a handful of ingredients, you'll have a delicious side dish recipe ready to enjoy in no time at all. Perfect for a side dish or a simple hearty meal.

    When it comes to one of my favorite foods, potatoes have to be at the top of the list. Not only are they cheap and affordable to buy, but they're also super simple to cook and make. 

    Using the Blackstone griddle gives tons of surface area to cook the crispy potatoes up easily, without stress or worry about the mess. These are the perfect addition to BBQs, family gatherings, or just a fun way to cook up those potatoes that have been sitting on your counter. 

    Dice them into bite-sized pieces and let the medium high heat of the griddle take over and do all the hard work for you. These crispy Blackstone potatoes are one of my favorite side dishes, and I have a feeling you'll agree. Just grab some of your favorite toppings or seasonings, and you're set.

    Ingredients

    Potatoes - You can use any type of potatoes that you want. Russet potatoes, red potatoes, and Yukon gold potatoes are all good options. 

    Pepper - We used a sweet yellow bell pepper but any type of pepper is fine.

    Onion - Sweet white onion or red onion offer the best flavor. 

    Oil - When cooking on the Blackstone griddle you will need to use some oil. We generally use canola oil and keep it in a squirt bottle to add it to the griddle easily.

    Salt & Black Pepper - You can season this recipe to taste.

    How to make Blackstone Potatoes

    Step One: Boil the potatoes for 5 minutes and then drain.

    Step Two: Preheat the Blackstone to medium-high heat.

    Step Three: Cook the potatoes, peppers, and onions for about 15 minutes, until browned and crispy. You can add more oil as needed.

    Season as desired with salt and pepper. Serve!

    Variations

    Add vegetables - If you want to increase the nutrition, you can always add more veggies. Dicing up some carrots and broccoli could be a really easy way to make this simple recipe heartier. Mushrooms would be a good choice, too.

    Add bacon - Make this Blackstone potatoes recipe a whole meal in itself by adding bacon. This is also a great way to make the potatoes have even more flavor from cooking in the bacon grease.

    Add eggs - If you want to make breakfast potatoes, adding a few eggs and cooking is a simple way to make that happen. 

    Add fresh herbs - You can easily change the flavor of these fried potatoes by adding fresh herbs like rosemary, thyme, etc.

    Common Questions 

    How do I prep potatoes?

    The biggest thing to remember is that you need to wash the outside of the potatoes well before dicing them up to cook them. Scrub away the dirt and grime.

    Then take a sharp knife and dice the potatoes into cubes. They don't have to be exactly the same size, but close is nice so that they cook at the same pace. 

    What are the best toppings to add to cooked potatoes?

    It's hard to pass up adding toppings to potatoes because they're the perfect base for it. Some of the main topping suggestions are a dollop of sour cream, parmesan cheese, shredded cheese, crumbled crispy bacon, diced green onions, or keep it simple with some garlic powder, black pepper, and kosher salt. 

    You can also add fresh cilantro for a pop of flavor and color on your Blackstone potatoes.

    Don't forget that toppings are always optional but are a simple way to make a dish taste unique and delicious.

    How do I know when the potatoes are done cooking? 

    They should be fork tender to be considered done and ready to enjoy. Literally, take a fork and press the tongs down into the middle of a piece of potato.

    If the potato is tender, it's done cooking and ready to start the cooling process. If there is a hardness to the potatoes, they need to cook a little bit longer. 

    Visually, the potatoes will also start to turn golden brown in color, indicating that they're getting cooked on the surface.

    Can I make this recipe on the stove top?

    You can. This griddle recipe is great for the stove top as well as the oven. For the stovetop, you'll just need to add a bit of olive oil or avocado oil into a skillet and cook until the potatoes are tender and the onions are translucent. 

    To cook these potatoes in the oven, you can add them to a baking sheet and roast or bake them until they are tender and delicious.

    • 4 potatoes cubed
    • ½ pepper chopped
    • ½ onion chopped
    • 2 teaspoon salt
    • ¼ teaspoon pepper
    • 2 tablespoon oil as needed
