    Blackstone Chicken Fried Rice is the best way to make a quick meal or side dish. Simple ingredients make this a must-make on your Blackstone griddle. This fried rice recipe pairs with just about anything.

    Making fried rice on the Blackstone griddle is actually really fun. Not only does it do a great job of cooking everything extremely well, it also gives you tons of space to do so. Because if you have ever ordered fried rice from your favorite restaurant and watched them cook it, it's proven to be kind of fun to be messy.

    Once you add everything on the flat top grill and start cooking, you will really feel like a line chef. It's fun, busy, and a great way to make a meal to feed the family. Adding in the protein and veggies is a perfect way to balance out the meal so that you are fueling the bellies of everyone in the house.

    Ingredients

    Vegetable oil - Other oils, such as coconut oil, could also be used. 

    Boneless skinless chicken thighs - This is the easiest chicken cut. You can also use other types and varieties such as chicken breast, but we prefer thighs in this recipe. 

    Cooked rice - Since the rice is already cooked, it's simple to warm up and golden the bottom quickly. 

    Onion - Dice up your favorite onion. Red onions or sweet onions would be good. 

    White mushrooms - Cut the onions into pieces. 

    Soy sauce - Low sodium soy sauce is an option as well. 

    Garlic - Minced garlic is my favorite to use for this recipe. 

    Green onions - Scallions are so good as a topping.

    How to Make Blackstone Chicken Fried Rice

    Step One: Preheat the griddle for 15 minutes on medium heat. It may heat faster in warm weather or take longer if it is very cold outside.

    Step Two: Add cooking oil and spread it into a thin layer.

    Step Three: Add the chicken. You don't need to chop it much first, you will chop it as it cooks on the flat top.

    Step Four: Add the garlic and onion and cook until golden. If you need to add more oil, do so.

    Step Five: Crack the egg onto the griddle and once it’s mainly cooked, flip it and chop it up. If you prefer to beat the egg first and scramble it that is fine too.

    Step Six: Flip the rice. The bottom of the rice should be golden. If you need to add more oil, do so.

    Cook the chicken so that it's cooked all the way. Using a meat thermometer is a simple way to test the internal temperature of the chicken. It should be 160-165 degrees.

    Cook everything separately until it's done cooking.

    Step Seven: Mix everything and then add the soy sauce. Toss a few times.

    Step Eight: Serve in a bowl and garnish with green onions.

    Variations

    Use different meat - You can also make this recipe using shrimp, beef, or pork. Make sure the meat is in bite-sized pieces, and you'll be good to go. Smaller meat bites pair best with the rice texture.

    Add fresh vegetables - Adding chopped carrots and bell peppers is a great way to add nutrients, color, and crunch. You can also add frozen peas and other basic ingredients to the rice mixture.

    Add seasonings - I think adding garlic powder or fresh ginger to this easy Blackstone chicken rice sounds delicious.

    Add different flavors - If you want to change up the dish, use sesame oil and top it with sesame seeds when cooked. It's so good!

    Gluten-free - Use a gluten-free soy sauce alternative such as coconut aminos or tamari.

    Common Questions

    What if one ingredient cooks fast than the others?

    All you need to do is move that one ingredient to the cooler side of the griddle. Since the Blackstone grill surface is larger, you can easily put it to the side and not have it keep cooking at the same speed as the other ingredients.

     Do I have to use leftover rice for this Blackstone chicken fried rice recipe?

    Yes, leftover rice is best for making fried rice. It can be as simple as cooking up white rice the day before and then storing it in an airtight container in the fridge overnight. Using a rice cooker to cook a large batch is fast and simple.

    Day-old rice just cooks up better and has the consistency needed for fried rice. You can use white rice, jasmine rice, or even brown rice as an option, too.

    Once you add the leftovers and then stir it all together, you really won't know what type of rice it is that you are using.

    How do I heat up leftover fried rice?

    You have options when it comes to heating leftovers. You can add a few drops of toasted sesame oil into a skillet or even into a frying pan and warm up a small batch that way. (just warm it up over medium high heat)

    For the fastest cook time, you can use the microwave as well - but it won't have that crispiness to it when it's heated that way.

    You can also add freshly beaten eggs and cook them up on the griddle or in the pan to add some more protein and flavor to the leftovers. Blackstone griddle recipes are easy to reheat and eat!

    Ingredients

    • ¼ cup vegetable oil
    • 2 lb boneless skinless chicken thighs
    • 3 cups cooked rice
    • ½ cup onion sliced
    • 2 large white mushrooms cut into large pieces
    • ¼ cup soy sauce
    • 2 cloves garlic minced
    • 1 tablespoon green onions sliced

    Instructions

    • Preheat the Blackstone griddle for 15 minutes on medium heat.
    • Add 2 tablespoons of cooking oil. Add rice and spread into a thin layer.
    • Add chicken to the griddle. Cut it into strips as it cooks using a metal spatula.
    • Add garlic and onions directly to the griddle. Cook until golden. Add more oil, as needed.
    • Crack the egg onto the griddle. When it is mostly cooked flip it over and chop.
    • Flip the rice over, the bottom should be golden. Add more oil, as needed.
    • Mix it all together and add the soy sauce. Gently toss a few times.
    • Transfer to a serving bowl and garnish with green onions.
