BBQ Chicken Flatbread is quick, easy, and loaded with smoky barbecue flavor. Tender chicken, melted cheese, thinly sliced onions, and a drizzle of creamy BBQ sauce come together on a crispy flatbread crust for a simple meal that's ready in about 20 minutes.
This easy flatbread pizza is one of my favorite ways to use leftover chicken. It's perfect for busy weeknights, game day snacks, casual lunches, or anytime you're craving pizza without the hassle of making dough from scratch.

Ingredients
- Cooked chicken - Rotisserie chicken, grilled chicken, or leftover chicken all work well.
- BBQ sauce - You can use your favorite type.
- Shredded cheese - Mozzarella, Monterey Jack, cheddar, gouda, or a blend all work well.
- Onion - Red onion or yellow onion. Slice this very thin.
- Mayonnaise - Mixed with the BBQ sauce to make the creamy topping.
- Fresh chives - Adds color and fresh flavor.
- Flatbread - I always use store-bought flatbread to make this fast.

How to Make BBQ Chicken Flatbread
Preheat the oven to 400°F. Add parchment paper to a baking sheet. Do not use foil, or it may stick. We've had that happen several times.

Step One: Combine the cooked chicken and BBQ sauce in a mixing bowl.

Step Two: Spread the chicken mixture on top of the flatbread. Make sure to spread to the edges of the flatbreads.

Step Three: Top with your choice of cheese. Then add the onion on top.

Step Four: Bake in the oven for about 14 minutes or until the cheese is bubbly. You want the onion on top to soften, as well.

Step Five: Combine the remaining BBQ sauce and mayo, season to taste with salt and pepper, then drizzle over the flatbread.

Step Six: Sprinkle with the fresh chives and serve.
Top tip
This recipe is a great way to use up leftover rotisserie chicken or grilled chicken breast! If you have some saved from dinner the day before, just dice it up and use it to save on time.
Substitutions
- Bread - You can use other types of bread for this recipe, like pita bread, naan bread, or even a pizza crust. Homemade or store-bought pizza dough also works.
- Toppings - Other fun topping ideas are pieces of fresh pineapple, cilantro, crispy bacon, and French fried onions.
Variations
- BBQ Bacon Chicken Flatbread – Add crumbled bacon before baking.
- Spicy BBQ Chicken Flatbread – Add sliced jalapeños or crushed red pepper flakes for extra spice. Another option is to mix hot honey into the drizzle or just use a spicy barbecue sauce.
- Chicken Ranch Flatbread – Replace the BBQ drizzle with ranch dressing.

Storage
Store leftover flatbreads tightly wrapped in plastic wrap or in an airtight container in the refrigerator for up to 3 days.
Reheat in the oven, air fryer, or in a covered frying pan on the stovetop for the crispiest crust. You can reheat leftovers in the microwave, but the crust will be softer.

You can rub a little bit of olive oil on the bottom of the crust so that while it bakes, it crisps up. Bake directly on a pizza stone, pizza steel, or preheated baking sheet, and avoid overloading the flatbread with toppings.
Yes. Naan bread works very well and creates a slightly thicker, chewier crust.
Mozzarella is the classic choice, but Monterey Jack, cheddar, gouda, or smoked mozzarella are all delicious.
You can assemble the flatbread a few hours ahead and refrigerate it until you're ready to bake.

BBQ Chicken Flatbread
Ingredients
- 7 oz flatbread
- 2 cups cooked chicken chopped
- ½ cup BBQ sauce
- 4 oz shredded cheese
- ¼ small onion very thinly sliced
- 2 tablespoon BBQ sauce
- 1 tablespoon mayo
- fresh chives
Instructions
- Preheat oven to 400. Line a baking sheet with parchment paper.
