Olive oil - You can also use coconut oil and avocado oil, too.
Bell peppers - Using a variety of green, red, and yellow create a really great look and flavor.
Onion - Sweet onions and red onions are my favorite to use.
Pulled pork - You can cook this ahead of time or use leftovers. We normally use a pork shoulder or pork butt. Check out our recipe for Traeger Pulled Pork to see how we cook it.
Shredded cheese - Use any blend of cheese such as cheddar cheese, Monterey jack cheese, or Colby jack cheese. The best cheese for nachos is the one you like.
Black beans - This is a great addition to add protein.
Sour cream - Greek yogurt (unflavored) works well also.
Pico de Gallo - You can add spicy or mild.
Cilantro - Fresh cilantro makes the perfect garnish.
Corn chips - You need crispy tortilla chips to make nachos. You can use plain chips or flavored chips. Up to you.

Add more fresh ingredients - The ingredients listed above are the ones that I love, but don't be scared to add more, especially fresh veggies. You can make this easy nachos recipe any way that you want, and changing it up is the best part. Add black olives, green onions, chopped red onion, or a squeeze of fresh lime juice.
Change the type of shredded cheese - Any flavor of cheese will work for this loaded nacho recipe. Once the cheese melts, it all covers the chips the same. Common Questions
Can I make this in a big batch?
You'll have to do this in a few batches to make sure that you get good coverage of the layer of tortilla chips. Since it makes a great appetizer, the best way to use this recipe is to keep making it and putting out fresh batches of this homemade nachos recipe.
Can I use leftover pulled pork?
You bet! If you have some that you cooked up in the slow cooker or Instant Pot, use those leftovers to make this loaded nachos recipe. This will save you prep time and cook time. Just be sure that you reheat the pork all the way before adding it to the layers of chips.
How do I avoid soggy nachos?
Adding ingredients creates fun, different flavors, but it's also a potential way to cut and add sogginess to the layer of chips. Make sure that you drain any ingredients like the beans or anything that has a liquid with them so that you don't have soggy chips.
Also, adding an extra cheese layer is a great barrier too. If you notice that the nachos are soggy, just make the correction for the next batch. You can also try putting the nachos back in the oven for a short time to see if that will help to soak up any of the liquid.
Refrain from making the nachos and then letting them sit. Eat them right away for the crunch!
