Leftover pizza - Any type of leftover pizza will work for this recipe. (And you don't need a whole pizza to make it, either.)
Eggs - Used to create a fluffy texture and make the base of the casserole. Large eggs or extra large eggs are fine.
Cream cheese - Adds a creaminess and smooth texture.
Salt and pepper - For taste. Both of these enhance the other flavors in the casserole.
Mozzarella cheese - To add more taste and helps to bind the ingredients.
Parmesan cheese - For flavor. Since parmesan cheese can be salty you can omit the added salt if you prefer.
Fresh basil or fresh oregano - This can be optional but makes a delicious garnish.
How to Make This Leftover Pizza Breakfast Casserole
Step One: Preheat the oven to 350 degrees. Grease a 9X13 casserole dish with cooking spray.
Step Two: Cut up the pizza into small pieces. Add the pizza pieces to the bottom of the prepared baking dish.
Step Three: Add the cream cheese, eggs, salt, and pepper into a blender. Blend until everything is smooth. Alternatively, you can mix in a large bowl with an electric mixer or whisk. Can I use any type of pizza?

- 4 slices leftover pizza (cut into bite-sized pieces)
- 8 eggs
- 4 oz cream cheese
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup mozzarella cheese
- ¼ cup parmesan cheese
- 2 tablespoon fresh basil or oregano chopped (optional)
