    Are you ready for something new and delicious to start off the day? This Leftover Pizza Breakfast Casserole is so much fun. The best part is that you're actually using a leftover pizza and just turning that into a larger heartier breakfast. It couldn't be easier to do.

    This is one of those hot breakfast recipes that makes the perfect breakfast. Using leftover slices of pizza to make a casserole is genius and a simple thing to do. No matter if you have pizza slices or pizza squares - either will work. This dish is a great way to show everyone in the household how easy it is to take leftover pizza crust and toppings and turn it into something new for the whole family to enjoy. 

    With the easy steps outlined below, you'll have a tasty treat for overnight guests or a fun and delicious pizza scramble for your crew. Who knew that using leftover cold pizza could have so many other tasty options?

    Ingredients

    Leftover pizza - Any type of leftover pizza will work for this recipe. (And you don't need a whole pizza to make it, either.) 

    Eggs - Used to create a fluffy texture and make the base of the casserole. Large eggs or extra large eggs are fine.

    Cream cheese - Adds a creaminess and smooth texture. 

    Salt and pepper - For taste. Both of these enhance the other flavors in the casserole.

    Mozzarella cheese - To add more taste and helps to bind the ingredients. 

    Parmesan cheese - For flavor. Since parmesan cheese can be salty you can omit the added salt if you prefer.

    Fresh basil or fresh oregano - This can be optional but makes a delicious garnish.

    How to Make This Leftover Pizza Breakfast Casserole 

    Step One: Preheat the oven to 350 degrees. Grease a 9X13 casserole dish with cooking spray.

    Step Two: Cut up the pizza into small pieces. Add the pizza pieces to the bottom of the prepared baking dish.

    Step Three: Add the cream cheese, eggs, salt, and pepper into a blender. Blend until everything is smooth. Alternatively, you can mix in a large bowl with an electric mixer or whisk. But make sure the eggs are room temperature and the cream cheese is very soft or you will end up with chunks of cream cheese.

    Step Four: Pour the egg mixture over the top of the pizza.

    Step Five: Top with mozzarella cheese. Sprinkle with the parmesan cheese.

    Step Six: Put the dish in the oven and bake for 30 minutes or until the middle of the casserole no longer jiggles. Top with the oregano or fresh basil.

    Step Seven: Serve with a side of marinara sauce.

    Variations 

    Make it spicy - If you want to kick up the heat, add some red pepper flakes or even a little bit of hot sauce to this mix. You can also use either of these as toppings.

    Add your favorite pizza toppings - If the leftover pizza doesn't have all the toppings that you want, you can add more to this breakfast pizza recipe. Adding bell peppers, extra cheese, or even cooked ground beef or ground breakfast sausage can be a great way to add more flavor to enjoy the next morning. You could literally add tons of different ingredients if you want. 

    Use other types of cheese - Adding cheddar cheese or other types of shredded cheese is a simple way to change the flavor. You can make this your perfect way easily. Topping with dollops of Smoked Ricotta is especially delicious.

    Common Questions 

    Can I prep this easy pizza casserole recipe the night before? 

    I recommend that you don't really make this dish until right before you're going to put it into the oven. This is because the simple tips and steps show that you're really just adding cream cheese, eggs, and other simple ingredients to pizza and baking it. Doing that the night before and then having it rest overnight seems like it might make for a soggy morning. Just make and bake right before you're going to serve it. 

    Can I use any type of pizza?

    Sure! This is great with sausage pizza, pepperoni pizza, or mushroom pizza. I'm not sure how Hawaiian pizza or buffalo chicken pizza would be in it but if you have one of those and try it let me know!

    ​Can I add other meats to this pizza breakfast casserole recipe? 

    Sure. Just make sure that whatever meat you're adding is already cooked. Adding sweet Italian sausage or topping with crispy bacon sounds like a great way to add flavor and taste. You can't go wrong with adding your favorite toppings!

    You can even try adding Smoked Venison Breakfast Sausage or Wild Boar Sausage.

    How do I store leftovers? 

    This easy breakfast casserole is literally made of leftovers, but you actually might find yourself having more! Just let the pizza dish cool down all the way, and then store any leftovers in an airtight container and keep them in the fridge. For the best results, eat within 2 days. 

    If you don't have a lid to cover it, you can also cover it with aluminum foil during this storage time. You can then easily reheat it in the microwave or oven when you're ready to eat again.

    • 4 slices leftover pizza (cut into bite-sized pieces)
    • 8 eggs
    • 4 oz cream cheese
    • ½ teaspoon salt
