    This Cajun Potato Salad is the best summer side dish ever. Made with simple ingredients loaded with flavor, this will be your go-to for BBQs, carry-ins, potlucks, and more. All you need is 25 minutes of time to whip up this gluten-free dish.

    Adding the cajun seasoning to this simple potato salad really takes up the flavor. It's one of those potato salads that will have you craving more and filling your plate with seconds. I've made and eaten a lot of potato salad in my days, and it's safe to say that this is one of the best.

    Not only do the tender potatoes have the perfect texture to them, but the added bell peppers and Greek yogurt give this dish a nice crunch and creamy combination at the same time.

    Ingredients

    Red potatoes - I like the texture and flavor of these potatoes, but you can also use Yukon gold potatoes as well. 

    Mayonnaise - This helps to add a bit of creaminess. 

    Greek yogurt - A great way to add some protein to the dish. 

    Cajun seasoning - Just a little bit of seasoning will add a ton of flavor. 

    Bell pepper - Be sure to dice the peppers up into bite-sized pieces. 

    Green onions - Chop and add right into the salad mixture. 

    Salt & Pepper - Add to taste. This will vary based on the brand of Cajun seasoning you use.

    How To Make Cajun Potato Salad

    Step One: Boil the potatoes until tender, about 12 minutes. Drain, rinse gently with cold water and let cool to room temperature.

    Expert Tip: Warm or hot potatoes will absorb some of the dressing. For the creamiest potato salad cook and chill the potatoes before you add the sauce.

    Step Two: Meanwhile, stir together the mayo, yogurt, and seasoning in a large bowl.

    Step Three: Add the cooled potatoes, peppers, and onions to the bowl. Gently toss until coated with the dressing.

    Step Four: Chill for at least 2-3 hours before serving.

    Variations

    Add relish - You can add dill pickle relish or sweet pickle relish to the dish. Just stir and combine well.

    Use a different type of potato - There are so many types of potatoes that you can swap in and out and use.

    Add mustard - Yellow mustard, creole mustard, or dijon mustard would work well.

    Make it spicy - If you're a fan of spicy potato salad recipes, add some heat with spices! A little bit of cayenne pepper will take the flavor to a spicy level.

    Add more crunchiness - A green bell pepper and yellow bell pepper is great, but you can also dice up celery and add it to the mix.

    Add eggs - To enhance the taste, you can add a chopped medium-boiled egg to this Cajun potato salad recipe. These Pressure Cooker Eggs come out perfect every time.

    Common Questions

    What is the cook time to get potatoes to fork tender?

    To get soft and tender potato cubes, it will take about 12 minutes of cooking time. By cutting the potatoes small, about 1-inch cubes or so in size, they'll cook fast and be simple to eat.

    You can leave the potato pieces bigger as well and just pay attention to the cooking time.

    Do you have to peel potatoes for potato salad?

    This all just depends on the type of potatoes that you use. Red potatoes are delicious and eaten whole all the time, so there is no need to peel the skin off them. However, other potatoes should be peeled as their skin isn't as flavorful or can be harder to clean.

    How do you store leftover potato salad?

    If you have leftovers, you're lucky that you'll get to enjoy this taste again! Just add it to the fridge and keep it stored in an airtight container. When you're ready to eat it next, just serve and eat!

    It should last for up to 3 days in the fridge without issue. Be sure to stir it well before eating, as sometimes it can settle a bit.

    Can you freeze potato salad?

    You can actually freeze potato salad, but it tastes better fresh. Due to the yogurt and the mayonnaise, I don't recommend freezing this recipe version of potato salad. Instead, just make a plan to eat it within a day or two of making it!

    What does potato salad pair well with?

    It's one of those side dishes that pair well with just about anything. I love serving it with our Smoked Hot Dogs and our Smoked Burgers as well. You can also just fill up a bowl and eat it just like it is.

    • ½ cup Greek yogurt
