Loaded Potato Bites make the perfect side dish or fun finger food. They're not only a great way to whip up an amazing recipe in a short time, but they're the perfect size to pop into your mouth and enjoy all the fun flavors in one bite.

These potato bites are my family's new favorite food. Adding your favorite toppings is a simple way to change the taste and flavor every time you make them.
The next time that you need to use up some potatoes, give these baked potato bites a try. They're great for game day snacks or a fun way to make a mini version of loaded baked potatoes or potato skins. You seriously can't go wrong.

Ingredients
- Potatoes - Try to slice them uniformly in size, about ⅓-inch thick.
- Olive oil - To coat the potatoes before baking.
- Salt and black pepper - For flavor.
- Shredded cheddar cheese - To add for a topping.
- Bacon crumbles - For flavor and protein.
- Sour cream - Just a dollop on each one works.
- Green onions - Dice and add.

How to Make Loaded Potato Bites
Line a baking sheet with parchment paper. Preheat the oven to 425 degrees.

Step One: Brush the potato slices all over with olive oil, then season with the pepper and salt. They should be in a single layer.

Step Two: Put the potatoes in the oven and roast until golden brown, about 25-35 minutes, flipping halfway. The cook time will vary based on the thickness of your potatoes.

Step Three: Sprinkle the bacon and cheese on top, then bake for another 3 minutes to melt the cheese.

Step Four: Remove from the oven and top as desired. We like to serve them with sour cream and thinly sliced green onions.
Top tip
You can use a food slicer to get uniform sections of the potatoes. Just be sure that you don't slice them too thin, as you want them to hold shape to be picked up easily when eating.
Substitutions
- Cheese - You can use any type of cheese that you want for this dish. Sharp cheddar cheese, mozzarella cheese, or Pepper Jack cheese all work.
- Greek yogurt - If you don't have sour cream, use plain Greek yogurt instead.
Variations
- Type of potatoes - While I like using Russet potatoes for these , you can also use red potatoes or any type that you like.
- Toppings - The great thing about making these bites is that you can easily change up the toppings. Adding fresh chives to the top of the potatoes is delicious, or keep them simple by using sea salt and pepper. You can also make them spicy by adding diced fresh jalapeno or sprinkling some cayenne pepper into the sour cream before dolloping it on top.

Equipment
Making these loaded potato bites is so simple. All you need is parchment paper, a sheet pan or baking sheet, a large mixing bowl, a spoon, and measuring cups.
Storage
Once these bites are cooked and cooled, store any leftovers in an airtight container and keep them in the fridge. When you're ready to reheat and eat, you can warm up in the microwave or even the air fryer for a burst of heat. I do recommend adding some fresh cheese on top and melting it as well.
While you can technically freeze this finger food for later, it really is best served fresh.

Common Questions
If, after baking the slices, you notice that they aren't fork-tender, that just means that they need just a little bit more time in the oven to cook. Just place the sheet pan back into the oven, and keep an eye on them while they cook for another 2-3 minutes.
Absolutely. You can easily double or triple this recipe to feed a crowd. Just be sure that you have more potatoes on hand, and follow the recipe to make as many as you'd like.
You can. You can serve with a bowl of ketchup, Ranch dressing, or just put them on a plate to pick up and eat. There's no wrong way to serve them, so have fun trying out different options.

Loaded Potato Bites
Ingredients
- 4 potatoes sliced ⅓ inch thick
- 2 tablespoon olive oil
- 2 teaspoon salt
- ½ teaspoon pepper
- 1 cup shredded cheddar
- ½ cup bacon crumbles
