How to Make Pork Belly Steak

Step One: Mix the brown sugar, garlic powder, onion powder, smoked paprika, salt, and black pepper in a bowl. Season the pork belly with the rub mixture.

Step Two: Put the pork belly onto a wire baking rack and then place the rack into the oven. Bake for one hour.

Step Three: Wrap the pork belly in aluminum foil and then add the bourbon. While it is baking, make the glaze by adding all the glaze ingredients to a glass measuring cup and microwave it for 20 seconds.

Step Four: Take the pork belly out of the oven and drain off any grease. Pour the glaze over the top of the pork belly and then bake uncovered for another 20 minutes.
Top tip
Pork belly contains plenty of fat, which makes it naturally tender. Give it enough time to cook slowly so the fat can render properly.
Substitutions
- Homemade sauce - If you don't want to do a glaze, you can make your own sauce using ingredients like soy sauce, tomato paste, hot honey, or even some spicy BBQ sauce to kick up the level of spiciness.
Variations
- Spicy Pork Belly Steak – Add cayenne pepper or red pepper flakes to the rub.
- BBQ Pork Belly Steak – Replace the glaze with your favorite barbecue sauce.
- Asian-Inspired Pork Belly – Add soy sauce, ginger, and sesame oil to the glaze.
- Hot Honey Pork Belly – Brush with hot honey during the final few minutes of cooking.
