Instructions
Preheat oven to 350.
In a large bowl, combine 1 teaspoon of brown sugar, garlic powder, onion powder, smoked paprika, salt, and pepper.
Season the pork belly with the rub.
Place the seasoned pork belly onto a wire baking rack. Place the entire rack into your preheated oven.
Bake the pork belly at 350°F for one hour. Then wrap the pork belly in aluminum foil and add the bourbon.
Bake for an additional hour wrapped.
Meanwhile, make the glaze. Combine the glaze ingredients in a large glass measuring cup and microwave for 20 seconds.
Remove the foil-wrapped pork belly and drain all the grease.
Pour the glaze over the pork belly. Place it onto a baking sheet and bake uncovered for another 20 minutes.
