How to Make Smoked London Broil
This is an easy one with not much prep time needed.
Step One - Remove the London broil steak from the packaging and pat dry with paper towels. Then, on a cutting board, tenderize the sides of the meat with a fork. Simply poke several holes in both sides of the steak.
Expert Tip: This will help to break down connective tissue and muscle fibers which will result in a beautifully tender piece of beef.
Step Two - Combine ingredients for the dry rub, and then season both sides of the London broil.
Step Three - Place meat directly onto the grill grates in your preheated smoker and smoke at 225°F for about 45 minutes to an hour, or until the internal temperature reaches 115 degrees F. Using the indirect heat, and monitoring the smoker temperature will allow us to impart a delicious smoky flavor to the meat while not overcooking it. Use a meat thermometer to monitor the internal temperature of the beef.
Reverse Sear the Smoked London Broil
Step Four - Once the steak reaches 115°F internally, it is time to reverse sear. You have a few different options to reverse sear, you can use a preheated cast iron skillet over medium/high heat. Or another great way is using either a gas grill or a charcoal grill. I find I get the best results when I use a hot charcoal grill, it just takes a little more work to prep, but if you can it is worth it. I love the additional flavor you get from the direct fire of the charcoal.
Whatever your decision is, you will want to cook over direct high heat, and only for about 2 to 3 minutes per side. It will really depend on the size and thickness of your London broil steak. Continue to monitor the internal temperature as you reverse-sear the steak. You are done when the internal temperature reaches 125°F.
Step Five - Remove the steak from the grill and allow it to rest for 5 minutes. Then, with a sharp knife, slice into thin strips, cutting against the grain. Enjoy!
