Ingredients
- Baked potatoes - Make sure that they're halved and hollowed. Scoop out the insides with a large spoon and save it to mash. I normally use Russet potatoes.
- Salted butter - You'll need one stick of butter.
- Half and half or milk - Helps to make the potato recipe rich and creamy.
- Salt and black pepper - For flavor.
- Garlic powder - For taste.
- Shredded cheese - Cheddar cheese is great, but any type will work.
- Bacon cumbles - The crispy bacon pairs well with the smoked potatoes.
- Chives - For adding extra flavor. Thinly sliced green onions, aka scallions, work as well.

How to Make Smoked Twice Baked Potatoes
Preheat the smoker to 225 degrees.

Step One: Mash the middle of the potato with the butter, sour cream, and half-and-half.

Step Two: Add the remaining filling ingredients. Fold them into the potatoes.

Step Three: Add the seasonings and taste. Add more salt or pepper if desired.

Step Four: Divide the filling between the potato shells. I find using a cookie scooper helps distribute the filling evenly.

Step Five: Add the filling to the hollowed potato skins and sprinkle the tops with extra cheese.

Step Six: Cook in the smoker for 2 hours.
Top tip
Make sure your baked potatoes are cooked thoroughly. They should be fork tender and 205 degrees with an internal thermometer. It is difficult to make this recipe with undercooked potatoes.
Substitutions
- Sweet potatoes - You can even make this recipe using sweet potatoes. For twice-baked sweet potatoes, I would switch the filling to sweet options like maple syrup, cinnamon, and maybe a few mini marshmallows.
- Smoked potatoes - For double the smoke flavor, make Traeger Baked Potatoes and then use those in the recipe instead of baked potatoes.
Variations
- Cream cheese - Some people like to add a little bit of cream cheese to the filled potato halves.
- Meat - If you don't want the crumbled bacon, you can add shredded pork or anything else that you want.

Smoked Twice Baked Potatoes
Ingredients
- 8 baked potatoes halved and hollowed (reserve insides to mash)
- ½ cup salted butter (1 stick)
- ¼ cup sour cream
- ¼ cup half and half or milk
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 cup shredded cheddar
- ¼ cup bacon crumbles
- 2 tablespoon chives
Instructions
- In a large bowl, mash the inside of the potatoes with the butter, sour cream, and half and half. If they do not mash evenly, warm them in the microwave for a minute.
- Add the seasonings. Season to taste.
- Add the remaining ingredients for the filling (reserve ¼ cup of shredded cheese for the topping) and mix well.
- Add the filling to the potato skins and top with the remaining cheese.
- Cook in a preheated smoker for 2 hours on 225.
- Optional: increase the heat to 425 for the last 5 minutes so the cheese on top of the potatoes browns.
