    Sourdough Grilled Cheese

    It's time to take your typical grilled sandwich to a whole new level of flavor. This Sourdough Grilled Cheese recipe proves that the times are changing on how grilled cheese can be made. One thing is for sure - you may never make a grilled cheese sandwich recipe any other way!

    There are few foods that scream comfort, but a delicious grilled cheese recipe is one of them. All you need is to pair it up with a hot bowl of tomato soup, and you're set for the night. I spent about 10 years (mostly as a teenager) as a vegetarian and grilled cheese was definitely a staple in my diet.

    About 6 months ago, I got into the wonder of baking real sourdough bread. I've always loved to bake but sourdough is a new challenge to any baker. It's been really fun learning the tricks and techniques behind it. 

    The great thing about using sourdough bread is that it adds a bit of tanginess to each bite. The texture and flavor of the sourdough pair so well with the melted cheese that you might as well plan on making a few extras because people are going to be asking for them. 

    It's time for grilled cheese to stop getting a bad rap about being "simple" and let the flavor of this dish speak for itself. When cooked correctly, it's an amazing crunch and taste that you won't soon forget.

    Ingredients

    Sourdough Bread - I made homemade sourdough bread but if you don't have the ability to make it homemade, get it at a local bakery for the next best thing. Most recently I've been using this No Knead Sourdough Recipe.

    Cheddar Cheese - This is my cheese of choice, but you can alter it to whatever you'd like. 

    Butter - This is what you'll put on the bread to have it crisp golden brown. I use salted butter for added flavor but unsalted is find if you prefer it. Some people will also use mayonnaise to do this, and it works! (you don't even taste the mayo at all)

    How to make Sourdough Grilled Cheese 

    Step One: Preheat a large skillet or frying pan over medium heat. 

    Step Two: Divide the butter between the top side of two pieces of bread.

    Step Three: Place the bread butter side down in the skillet.

    Step Four: Top with the cheese. Cook for 2 minutes until the bread begins to brown.

    Step Five: Cover the pan with a lid.

    Step Six: Cook for about 2 more minutes until the cheese has melted.

    Step Seven: Flip over one piece of bread onto the other so the cheese is inside. Serve immediately.

    Variations 

    Onions - Caramelized onions are a great way to add flavor quickly. Plus, you can cook them up in the same hot skillet easily. 

    Cheese -  Since cheese is the star of the show, why not try some different options? Monterey Jack, pepper jack, American cheese, gruyere, extra sharp cheddar cheese, fontina, or even brie would all be perfection on a slice of bread. 

    Bacon - Need I say more? This is a great way to up the protein! Be sure to check out my Smoked Pork Belly which could be an awesome side dish of added protein. 

    Tomatoes - This is definitely a classic addition. Just slice them thin and add in between slices of cheese.

    Garlic - I like to rub the outside of the bread with a halved garlic close for a subtle garlic flavor that isn't overpowering.

    Herbs - To really elevate your sourdough grilled cheese to the next level sprinkle in a few fresh thyme leaves or some julienned basil.

    Common Questions

    Can I use a cast iron pan?

    Yes, you can! Just make sure that the bread slices fit inside the skillet so that you cook it all easily. Using a cast iron skillet is a great way to add a crispy crust with some of the seasonings from the pan. 

    A cast iron is a great option because it helps to disperse the heat evenly. It also tends to be a faster cooking time, so just stay close and pay attention. You don't want to burn the bread! 

    What side dishes pair well with cooked grilled cheese? 

    To cut calories, pair this tasty recipe with a simple side salad. The classic melt of the sandwich is a great option to pair with a crunchy salad. 

    Soups are also always a good idea! And if you just want to eat a sandwich and nothing else, go for it! It's a whole meal all in itself! 

    How do I not burn the slices of sourdough bread? 

    Cooking over medium-low heat is key. This way, the outside crust of the bread will be crispy, leaving the inside tender and chewy. Cook it correctly and it'll be Instagram worthy! 

    Can I store leftover grilled cheese? 

    Yes, you can. Just add any grilled cheese leftovers to an airtight container and keep it in the fridge. This way, you can reheat easily when you're ready to enjoy. 

    If you want to have some of the crisp back to your sandwich, I would suggest reheating in the air fryer for just a couple minutes! This will give it a crunch and have it tasting like it was cooked fresh!
