    Smoked Bread Pudding is one of the best flavors! The sweetness of pudding paired with the simple smoke flavoring creates the best bread pudding recipe around. One bite, and you'll be hooked.

    Most people who have ever had bread pudding have probably only had it from the oven. But times are changing, and it's fun to show off everything that a smoker can actually cook. This sweet dessert is easy to put together and literally takes just a few moments of time to prep and cook. It's an amazing bread pudding recipe to serve any time of year and really fun to share with family and friends. 

    Use your pellet smoker during the summer months, and make this delicious treat. It's a great way to make a fun dessert that no one has really even thought of before. I love making desserts on the smoker, especially since it clears up room to keep using the oven for other things. This is our little trick during the holidays when we have a ton of stuff cooking at once.

    Ingredients 

    Brioche bread - This is my favorite type of bread to use, but you can honestly use any bread that you want. 

    Whole milk - Needed for the extra flavor and fat content.  

    Eggs - Acts as the binding agent for all the ingredients. 

    Sugar - You can use white or brown sugar or a mixture of both. 

    Cinnamon - For flavor.

    How to make Smoked Bread Pudding

    Step One: Preheat the smoker to 225 degrees.

    Step Two: Mix all the ingredients together in a bowl.

    Step Three: Pour all the ingredients into a 9X13 inch casserole dish.

    Expert Tip: We normally use a glass baking dish when cooking on the smoker. The glass will not absorb the smoky flavor.

    Step Four: Cook on the smoker for 2-2.5 hours.

    Step Five: Remove once the top is slightly golden brown, and the casserole dish is only slightly jiggly.

    ​Variations 

    Add brown sugar - This recipe only calls for white sugar but you can really use white or brown sugar. 

    Extracts - Adding vanilla extract, almond extract, or maple extract will add a boost of flavor.

    Add chocolate - If you want to change the flavor, add some white chocolate chips or even milk chocolate chips to this dish. 

    Add toppings - A lot of people will add a drizzle of the rum sauce on top to really create a delicious taste. You can add ground nutmeg, homemade heavy whipping cream, or even a cinnamon-sugar mixture right on top. 

    Use stale bread - You can easily make this recipe with a different bread mixture. Some people use old bread cut into 1-inch cubes, while others like the flavor and texture that soaked French bread adds.

    ​Common Questions 

    Why is my bread pudding too dry?

    It's important to pay attention to the directions on the recipe card as you're adding them. The egg mixture paired with the bread is key to keeping bread pudding delicious and not dried out. If you think that the bread pudding is too dry, you can always add additional butter into the mixture or pour a bit of butter on top of the individual servings as well. 

    Why is my bread pudding so watery?

    On the flip side, you may wonder why the bread cubes and ingredients are watery. This can happen if you stir the milk mixture too much. Just combine and stir everything until it's mixed, but no more than that. 

    Also, make sure to let the pudding rest for a few minutes in the baking pan once you remove it from the pellet grill or smoker. This will help to firm the mixture a bit as it will do so as it cools.

    How do you know if the bread pudding is done?

    Since you're using whole eggs in this mixture, it's important to make sure that the pudding is cooked all the way. Once the time has passed, the top should be golden brown, and there should only be a slight jiggle to the bread pudding, which should firm as it cools. 

    How do I store leftover bread pudding? 

    I think that leftovers have a next-level flavor! Just let the bread pudding cool down all the way, and then store them in an airtight container. The next day when you're ready to eat, you can reheat and enjoy. I like adding a scoop to a small bowl and then letting it come to room temperature. I then top it with ice cream or even whipped cream and enjoy.

    Ingredients

    • 5 cups brioche cubed
    • 2 ¼ cups whole milk
    • 2 eggs beaten
    • ½ cup sugar
    • 1.5 teaspoon cinnamon

    Instructions

    • Preheat the smoker to 225.
    • Combine all ingredients in a large bowl. Mix thoroughly.
    • Transfer to a greased 9x13 casserole dish.
    • Cook on the smoker for 2 to 2.5 hours.
    • The bread pudding should be browned and only jiggle slightly.
