Place the halved garlic cloves on a piece of foil and drizzle with one tablespoon of olive oil. Sprinkle with salt and pepper.
Add the garlic to the smoker. Smoke for 90 minutes on medium (225 degrees).
Enclose in the foil, add the remaining oil, and cook for about 1 more hour until the garlic is softened.
