boneless skinless chicken thighs
cut into small pieces

chorizo

arborio rice
rinsed

cup
onion
chopped

garlic
finely chopped

chicken broth

white wine
shaved parmesan

Instructions
Brown the chorizo and chicken in a large skillet. Once browned, remove and set aside.
Saute the rice with the onion and garlic until the vegetables are softened.
Add the white wine and cook for 2-3 minutes.
Slowly add chicken stock, a ladle at a time, constantly stirring, over medium heat.
Add cooked meat back to the risotto.
Serve immediately with a garnish of parmesan cheese and chopped parsley.
