Place wings in preheated smoker directly on grate. Smoke in the temperature range of 160°F - 200°F for about 120 minutes.
Remove wings from smoker and grill over high heat for about 10 minutes or until the internal temperature reaches 165°F.
Place wings in a large bowl and dust with seasoning mix. Flip wings in the bowl to ensure thoroughly coated with seasoning.
Additional variation. If you don't want to use a grill, you can increase the temperature on your smoker to 500°F to get crispy skin.You can also choose to continue to just cook the wings at 200°F until the internal temperature reaches 165°F.
Place the wings into a large bowl. Drizzle the hot wings with the honey. Sprinkle with the seasoning.
Notes
Hot Honey - You can easily make your own by mixing a little sriracha sauce into honey. Lemon Pepper Seasoning - If you are using a seasoning without added salt make sure to add salt.
