Preheat smoker to 225. Spray an 8x8 aluminum pan with cooking spray.
Stir together the dry ingredients. Add the wet ingredients and mix until smooth. The batter will be thick.
Add the batter to the prepared pan and spread until it is smooth.
Cook the cornbread on the smoker for 1.5 to 2 hours or until a toothpick inserted in the center comes clean.
Notes
Cook Temp: Cooking the cornbread at a lower than normal baking temperature ensures they have time to absorb that smoky flavor. You can cook this at 300 or 350 if you prefer, just reduce the cooking time to between 45 minutes and an hour.
