Place all ingredients into a medium size mixing bowl. Mix with your hands to ensure all the ingredients are well incorporated.
Form the meat mixture into eight 2 oz patties.
Place the sausage patties into a preheated smoker and smoke that meat at 225°F for about an hour. The patties are done when the internal temperature reaches 150°F.
